We had a lovely evening in the company of friends, franks, fun and fireworks! The kids and I made cupcakes with a patriotic theme and I got 2 zucchini breads from just 1/2 of the monster one. My recipe for the breads mentioned that you can shred, measure and freeze the fresh zucchini if you have a bumper crop. I think I’ll do the same.
